A simple way to prepare this classic Irish dish. Top it with horseradish cream or mustard and serve it with a side of potatoes. Keep in mind the meat shrinks down to almost 1 lb when cooked.
For Main Dish:
2.5 lbs corned beef brisket in brine, fat trimmed off
1 cup baby carrots, peeled
1 small head cabbage, cut into 4 wedges
2 bay leaves
For the Horseradish Cream
1 tbsp prepared grated horseradish
1/4 cup fat free sour cream
1/4 tsp dijon mustard
salt and pepper
Directions:
In a large pot, place brisket, bay leaves and enough water to cover. Simmer, covered for about an hour per pound. When meat is tender add carrots. Boil for about 10 minutes, then add cabbage. Cook another 15- 20 minutes, until tender.
Remove the meat and place on a cutting board. Slice the meat across the grain into thin slices. Serve with vegetables and ladle some broth on top

Farmers Market!
My goal for 2012 is to become active in Farmers Markets. With the price of produce I think this will be a lucrative venture! I have 3 acres at my home and 10 acres at my dad's. Should be able to plant plenty of produce!

Little Bangkok
My new favorite restaurant in East grand Forks!
Brandon had the Crying Tiger Ribeye (Thai) that came w/2 sides. He had Tempura yams which are now my new favorite and Brown Rice. I had the small Sushi boat w/spicy Tuna Roll and Chef's choice it also came w/seaweed salad!! Enough for another meal! For appetizer we had Yaki Pork Gyoza. (dumpling) All meals also come w/salad w/house ginger dressing or Miso soup. Brandon even tried the Sushi and although not a favorite for him he still tried it!

Crab Omelet
Tonight I am going to make Crab omelet's w/hollandaise sauce and lemon poppy seed bagels. A side of fresh strawberries too! I sure wish we had fresh crab here..I miss throwing out the crab pots and eating fresh Dungeness Crab! I lived less than a mile from the docks in Mukilteo,Washington. The kids and I would go down in the evenings and crab. Miss those days...
